Peach and Raspberry Tartin

Ingredients:

  • 4 peaches halved and pit removed
  • 1 cup of brown sugar
  • 1/4 cup of butter
  • 2 sprigs of rosemary
  • Puff pastry (homemade or store bought)
  • Pinch of salt
Instructions:
  • Preheat over to 375
  • In a cast iron pan, melt 3/4 cup of sugar on low heat. Make sure to use a wooden spoon to stir so that it doesn’t burn
  • Add butter and stir
  • Add in rosemary sprigs
  • Peaches in to sugar butter mixture skin side first for about 3 minutes
  • Remove rosemary sprigs
  • Turn over peaches so that it is cut side down
  • Take pan off heat
  • Place puff pastry over the peaches and tuck the corners under
  • Place into over and bake (approx 20 mins) or until puff pastry has puffed and turned slightly brown
  • Turn over onto a place
  • Cool
  • Cut and Enjoy!
