Feeling peachy. Needing a sweet treat quickly.
Peach and Raspberry Tartin
Ingredients:
- 4 peaches halved and pit removed
- 1 cup of brown sugar
- 1/4 cup of butter
- 2 sprigs of rosemary
- Puff pastry (homemade or store bought)
- Pinch of salt
Instructions:
- Preheat over to 375
- In a cast iron pan, melt 3/4 cup of sugar on low heat. Make sure to use a wooden spoon to stir so that it doesn’t burn
- Add butter and stir
- Add in rosemary sprigs
- Peaches in to sugar butter mixture skin side first for about 3 minutes
- Remove rosemary sprigs
- Turn over peaches so that it is cut side down
- Take pan off heat
- Place puff pastry over the peaches and tuck the corners under
- Place into over and bake (approx 20 mins) or until puff pastry has puffed and turned slightly brown
- Turn over onto a place
- Cool
- Cut and Enjoy!
