On yogurt. On ice cream. On smushed Avocado. On its own. I’ve done it all. This is ADDICTIVE

Granola

Ingredients:

  • 2 cups of Quinoa flakes
  • 1 cup of rolled oats
  • 4 tablespoons of chia seeds
  • 1/2 cup of pumpkin seeds
  • 1/2 cup of walnuts
  • 1/2 cup of shredded coconut (unsweetened)
  • 1/4 cup of coconut oil melted
  • 1 tsp of salt
  • 1 1/2 tsp of nutmeg
  • 1/4 cup of maple syrup
  • 1/2 cup of dates, pited and cut up into pieces
Instructions:
  • Preheat to 380
  • Mix all ingredients in a bowl except for the dates
  • Place the mixture on a baking tray over parchment paper and spread it thin
  • Bake for about 30-40 minutes. Keep an eye out on it depending on your own to make sure that it doesn’t burn
  • Cool
  • Mix in dates

Notes:

  • I don’t bake the dates because I find they get hard
  • Note, you can really replace any ingredients in this (especially the nuts) to any you like. Use the Quinoa flakes and oats as a base and away goes your taste bud creativity.
