On yogurt. On ice cream. On smushed Avocado. On its own. I’ve done it all. This is ADDICTIVE
Granola
Ingredients:
- 2 cups of Quinoa flakes
- 1 cup of rolled oats
- 4 tablespoons of chia seeds
- 1/2 cup of pumpkin seeds
- 1/2 cup of walnuts
- 1/2 cup of shredded coconut (unsweetened)
- 1/4 cup of coconut oil melted
- 1 tsp of salt
- 1 1/2 tsp of nutmeg
- 1/4 cup of maple syrup
- 1/2 cup of dates, pited and cut up into pieces
Instructions:
- Preheat to 380
- Mix all ingredients in a bowl except for the dates
- Place the mixture on a baking tray over parchment paper and spread it thin
- Bake for about 30-40 minutes. Keep an eye out on it depending on your own to make sure that it doesn’t burn
- Cool
- Mix in dates
Notes:
- I don’t bake the dates because I find they get hard
- Note, you can really replace any ingredients in this (especially the nuts) to any you like. Use the Quinoa flakes and oats as a base and away goes your taste bud creativity.
