How to continue the Turkey consumption outside of Thanksgiving dinners? Suggestion: Turkey Chilli Bowls.

Turkey Chilli

Ingredients:

  • 1 tablespoon of coconut oil
  • 1/2 tbsp of olive oil
  • 1/2 cup of diced onions
  • 1 tbsp diced garlic
  • 1/2 tbsp diced ginger
  • 1/2 cup of diced red pepper
  • 1lb of ground turkey
  • 1 tsp of cumin
  • 1 tsp of oregano
  • 1/4 tsp of cinnamon
  • 1/4 tsp of nutmeg
  • 1/2 tsp of chilli powder
  • 1/2 tsp of paprika (or smoked paprika)
  • 1 can of kidney beans
  • 1 can of sweet whole kernel corn
  • 1 can of diced tomatoes
  • 1 can of tomato paste
  • 1 1/4 cup of veggie broth
Instructions:
  • Heat coconut and olive oil in a saucepan. Add onions, garlic, ginger and red pepper and saute until ingredients are soft and fragrant.
  • Add ground turkey and cook until the meat is fully cooked. Use a wooden spoon to break down the ground turkey so that they don’t cook in clumps
  • Add in cumin, oregano, cinnamon, nutmeg, chilli powder and paprika. Mix all ingredients with the spices and let cook for a couple of minutes.
  • Add in kidney beans, corn, diced tomatoes, tomato past and veggie broth. Mix well and lower temperature to low and let the chilli simmer for about 10-15 mins. Stir occasionally.

Now to make it into a bowl….so fancy right?

Layer a bowl with a bed of cooked quinoa, scoop a couple of heaping of warm chilli, a couple of cucumber slices, avocado and a spoonful of ricotta. Other additions can include arugula leaves, cheddar cheese and/or whatever you have in the fridge. That’s the magic of a bowl.
