Mussels and Margaritas

How can you make it, pray tell?

Mussel vongole

Ingredients:

  • 1-2 pounds of Mussels (washed, de-bearded and opened mussels thrown out)
  • 1 can of canned tomatoes (chopped)
  • 1 can of tomato paste
  • 1 tablespoon of diced red chilli (you can subsitute with with chilli flakes, add to your comfortable spice amount)
  • 1/2 – 1 cup of red wine
  • 1/2 teaspoon of dried basil
  • 1/2 teaspoon of dried oregano
  • 4 cloves of diced garlic
  • 1 diced shallots
  • 1/4 cup of olive oil
  • spaghetti, cooked to al dente(enough for 3 servings)
  • *to make it a heartier meal, you can add some vegetable like snow peas or spinach
  • garnish with some cilantro
Instructions:
  • Heat a large pot to medium with olive oil
  • Add and sauted shallots and garlic until it turns slightly translucent
  • Add in tomato paste and then canned crushed tomatoes. Stir and let it sit for a few minutes
  • Add Oregano, basil and chillis
  • Add mussels and red wine. Stir until properly combine
  • Close pot with a lit and let it simmer
  • Cook, stirring and tossing, until mussels have opened. Approx. 10 minutes. Throw away any that have not opened.
  • *If you are adding in vegetables, add them in now, turn heat down to low and let vegetable cook
  • Add in cooked spaghetti and toss into sauce well

Margaritas!

Ingredients:

  • 3 lemons skin peeled and cut in half
  • 1 tablespoon of water
  • 2 tablespoons of agave or honey
  • 1 can of soda water/tonic water
  • 3 shots of tequila
  • 1 shot of Grand Marnier
  • a splash of salt
  • *garnish sea salt to rim the glass

Utensils:

  • paring knife
  • magic bullet (or blender)
  • jug
  • lots of ice
  • glasses
Instructions:
  • *I very much dislike squeezing whole limes. So this is my handy dandy trick to getting lime juice without having to squeeze lemons
  • Cut lemon in half using a paring knife and then I use pairing knife to peel lime rind off.
  • Throw the peeled limes into a magic bullet (or blender) with about a tablespoon of water and whiz it till the juices are all out
  • Strain the pulp from the lime juice and discard pulp
  • Add the lime juice back into the magic bullet (blender), add in salt and agave and whiz until fully combined
  • Pour this mixture into a jug full of ice.
  • Add in soda water, tequila and Grand Marnier. Mix well.
  • Pour margarita into salt rimmed glasses
